R type thermocouple SS316 consists of a long thin wire (the conductor) surrounded by a short thick wire (the resistor). When the wires touch, they form a circuit. As the temperature changes, the resistance of the resistor changes too. A voltage is created across the resistor and can be measured using a volt meter.
